Ingredients

  • 1 cup sun-dried tomatoes in oil drained, 185g
  • 1/3 cup walnuts or peeled almonds, 35g
  • 2 cloves garlic
  • 3/4 cup Parmesan Cheese 70g, grated
  • 1/4 cup sun-dried tomato oil 55g
  • 1/8 teaspoon chili flakes optional
  • lemon optional, zest grated from 1/2 lemon
  • 1 cup basil leaves 20g fresh
  • 1/4 cup olive oil 55g
  • salt to taste
  • black pepper to taste
  • 12 ounces spaghetti pasta 340g
  • Parmesan Cheese to serve, grated

Instructions

  1. Cook pasta al dente according to package instructions (it should have a bite to it and not be too soft). Drain.
  2. Make pesto: Add all the ingredients except the olive oil into a food processor bowl.
  3. Mix over high speed until very finely chopped (it should be a little bit chunky and not completely smooth).
  4. Add the olive oil and mix over low speed or pulse until well-combined.
  5. Season to taste with salt and pepper.
  6. Toss the cooked pasta with pesto.
  7. Serve sprinkled with grated parmesan cheese.
  8. Enjoy!
