Sundubu Ramen

Sundubu Ramen is a comforting noodle soup featuring instant ramen noodles in a savory, mildly spicy broth with kimchi, garlic, and gochugaru. Soft tofu is added for a delicate texture and protein, while an egg enriches the broth. Description

Sundubu Ramen begins with sautéing kimchi and garlic in sesame oil to release their aromas and flavors. Water is added along with the seasoning packets from instant noodles and gochugaru, a Korean chili powder, to build a gently spiced broth. Instant noodles cook directly in the broth, absorbing the seasoned liquid.

Extra soft tofu is incorporated to create silky texture contrasts with the noodles. The egg is added near the end to softly cook in the simmering broth, enriching the flavor and body of the soup. Finally, sliced green onions bring a fresh, herbal note.

This dish is a straightforward, one-pot meal that combines elements of Korean and Japanese flavors, making it a practical choice for a soothing noodle soup that balances spice, softness, and subtle acidity from the kimchi.

  • 1 tbsp sesame oil
  • ½ cup kimchi or more
  • 1 tbsp garlic minced
  • cup water
  • 1 packet instant noodles including the seasoning packets
  • ½ tbsp gochugaru
  • 5 oz extra soft tofu approximately half a tube of tofu
  • 1 egg
  • 3 green onion sliced, stalks

Instructions

  1. In a small pot, heat the sesame oil over medium-heat. Once hot, add the kimchi and sauté until softened, about 2 to 3 minutes. Then, add the garlic and sauté for another minute.
  2. Add a cup and a half of water to the pot, the seasoning packets, and gochugaru to the pot. Let the liquid come up to a simmer before adding the instant noodles.
  3. Simmer for a minute before adding the soft tofu. You can add the tofu as is to the soup, mix it into the soup, or slice the tofu and place it on top.
  4. Simmer for another minute before adding the egg. Simmer for another two minutes before add the green onions and removing the pot off the heat.
