Super Easy Mexican Rice (Spanish Rice)
Description
The recipe begins by toasting the rice with spices and butter to coat the grains and develop a mild toasted aroma. Tomato sauce and chicken broth are then added, creating a flavorful cooking liquid that infuses the rice as it simmers. Covered and cooked for about 25 minutes, the rice softens completely while retaining individual grain texture.
The seasonings—cumin, chili powder, salt, and onion powder—add an earthy warmth without overwhelming heat, complementing the tomato's acidity. This rice pairs well with beans, grilled meats, or as part of burritos and tacos.
Vegetarian adjustments include substituting vegetable broth for chicken broth. To prevent sticking, especially when using less nonstick cookware, stirring occasionally during simmering is advised. Fluffing with a fork before serving lifts the grains for an even texture.
