Super-Good Chili with Beer
Description
The chili begins by browning ground beef in canola oil, then cooking onion and garlic until softened. Cumin is added for aroma before stirring in diced tomatoes, pinto and kidney beans, diced green chiles, hot pepper sauce, salt, and a bottle of beer. The mixture is brought to a boil and then simmered for 20 minutes, allowing the flavors to marry and the chili to thicken.

Ingredients
- 1 Tablespoon canola oil
- 2 pounds ground beef or turkey
- 1 onion chopped, large
- 3 garlic chopped, cloves
- 1 1/2 Tablespoons cumin ground
- 1 diced tomatoes 12 ounce can
- 1 pinto beans 16 ounce, drained and rinsed
- 1 red kidney beans 16 ounce, drained and rinsed
- 1 beer 12 ounce bottle
- 1 green chiles 4 ounce, diced
- 1 Tablespoon hot pepper sauce
- 1 1/2 teaspoons salt

Instructions
- Heat oil in a large saucepan over medium heat. Add meat and cook until well browned. Remove meat into a separate bowl. Add onion and garlic back to remaining oil in the pan; cook over medium heat until tenter (approximately 5 minutes). Return meat to saucepan and stir in cumin, blending for about 1 minute.
- Stir in tomatoes (including liquids), beans, beer, chills, pepper sauce, and salt. Bring to a boil, then reduce heat and simmer for 20 minutes to blend flavors. Serve with cheese.
