Super Simple Chocolate Mousse
Description
This chocolate mousse features melted vegan semi-sweet chocolate blended with silken tofu and vanilla extract. The tofu contributes a soft, creamy base, resulting in a mousse with a delicate, smooth texture that holds shape after chilling. The process involves melting the chocolate carefully and blending it with the tofu and vanilla until homogeneous, followed by freezing to firm up the mousse.
Once set, the mousse can be served as a chilled dessert on its own or garnished with fresh fruit or nuts. The recipe’s simplicity and plant-based ingredients make it suitable for vegan diets and those avoiding dairy.
Storing the mousse in the refrigerator is advised for up to five days to maintain freshness and texture. This storage advice ensures the mousse remains enjoyable while preventing spoilage.
Ingredients
- 12 ounces vegan semi-sweet chocolate chips
- 14 ounces silken tofu also called soft; drained
- 1 teaspoon vanilla extract
Instructions
- In a small, microwave-safe bowl, microwave the chocolate chips for 45 seconds. Mix with a fork until smooth. (If the chocolate is still lumpy, microwave for 20-second intervals, mixing in between, until the chocolate is completely smooth.)
- In a blender or food processor, blend the melted chocolate, tofu, and vanilla until creamy.
- Pour the tofu-chocolate mixture into a bowl and place in the freezer for 30 minutes or until the filling solidifies.
Notes
- Store the mousse in the refrigerator for up to five days to keep it fresh and maintain texture.
