Description
This Sushi Rice recipe involves rinsing the rice under cool water for several minutes to remove excess starch, then allowing it to dry briefly before cooking. The rice is boiled and then steamed gently until fully cooked and tender.
Separately, rice vinegar combined with sugar and salt is heated just until dissolved, creating a seasoned vinegar mixture. This is then carefully folded into the warm cooked rice using a spatula, taking care not to mash the grains. The folding technique ensures even seasoning and prevents the rice from becoming mushy.
After seasoning, the rice is left to cool to room temperature before using it for sushi rolls or bowls. This method produces sushi rice with a balance of sweetness, acidity, and saltiness that complements various sushi ingredients or can be served on its own with toppings.
Ingredients
- 2 cups sushi rice
- 1/4 cup rice vinegar
- 2 tablespoons granulated sugar
- 2 1/2 teaspoons salt
Instructions
- Place the rice in a colander. Rinse under cool water for 3 minutes, stirring occasionally. Let the rice dry for 15 minutes.
- Place the rice in a medium pot with 2 cups of water and bring to a boil. Cover the pot, reduce the heat to low, and cook for 15 minutes.
- Remove the pot from the heat. Let the rice stand, covered, for 15 minutes.
- Place the rice vinegar, sugar and salt in a small bowl. Microwave in 30 second intervals until salt and sugar are dissolved, stirring occasionally.
- Transfer the rice to a large glass or wooden bowl. Drizzle the vinegar mixture over the rice. Use a spatula or a spoon to gently fold the vinegar mixture into the rice.
- Let the rice cool for 10 minutes, then serve.
