  • 1/4 cup rice vinegar
  • 2 tablespoons granulated sugar
  • 2 1/2 teaspoons salt

Instructions

  1. Place the rice in a colander. Rinse under cool water for 3 minutes, stirring occasionally. Let the rice dry for 15 minutes.
  2. Place the rice in a medium pot with 2 cups of water and bring to a boil. Cover the pot, reduce the heat to low, and cook for 15 minutes.
  3. Remove the pot from the heat. Let the rice stand, covered, for 15 minutes.
  4. Place the rice vinegar, sugar and salt in a small bowl. Microwave in 30 second intervals until salt and sugar are dissolved, stirring occasionally.
  5. Transfer the rice to a large glass or wooden bowl. Drizzle the vinegar mixture over the rice. Use a spatula or a spoon to gently fold the vinegar mixture into the rice.
  6. Let the rice cool for 10 minutes, then serve.
