  • 1 Tablespoon neutral cooking oil generic cooking oil
  • 1/2 pound ground chicken
  • 1/2 onion chopped
  • 1/2 package stir fry vegetables 6 ounces, frozen
  • 1/2 cup crushed pineapple drained
  • 1/4 cup sweet and sour sauce
  • 8 egg roll wrappers

Instructions

  1. Heat a skillet on medium heat for 2 minutes. Add ground chicken and cook, stirring. Break the chicken up with a spoon as it cooks. Cook for 5 minutes until the chicken is no longer pink.
  2. Add the frozen stir fry vegetables. Cook, stirring for about 3 minutes.
  3. Add the crushed pineapple and stir to mix. Then add the sweet and sour sauce and mix it in. Take the skillet off the heat.
  4. The egg rolls will be easier to handle if you let the filling cool for 5 minutes.
  5. To roll the egg rolls position an egg roll wrapper on a cutting board with one corner towards you.
  6. Put 1/4 cup of filling in the top of the wrapper. Fold the top corner over the filling and fold in the sides. Roll the egg roll wrapper down, folding in the sides as you go. Put a little bit of water on the bottom corner of the wrapper before you roll it all the way up to help it seal.
  7. Continue to roll the egg rolls until all the filling is gone.
  8. Preheat the air fryer to 400 F for 2-3 minutes. I rarely preheat my air fryer, but I do for egg rolls.
  9. Put the egg rolls in an air fryer basket and spray the egg rolls lightly with cooking spray if desired. This will ensure even browning of the egg rolls.
  10. Cook the egg rolls in a preheated air fryer at 400 F for 6-8 minutes, flipping once with tongs half way through.
  11. If they aren't quite brown enough put them back in for a another few minutes.
  12. Serve with more sweet and sour sauce for dipping.

  • Avoid overfilling egg roll wrappers to prevent tearing.
  • Do not overcrowd the air fryer basket for consistent cooking.
  • If an air fryer is unavailable, bake egg rolls at 400°F for 15-20 minutes.
