Sweet and Sour Ground Chicken

Sweet and Sour Ground Chicken pairs savory ground chicken with diced bell peppers and onions cooked in a tangy sauce of pineapple juice, vinegar, sugar, ketchup, and soy sauce, thickened with cornstarch. The addition of pineapple chunks adds bursts of sweetness, creating a balance between tart and sweet flavors, complemented by tender vegetables and a glossy sauce. This dish is quick to prepare and meant to be served over rice.

Description

This recipe starts with sautéing ground chicken alongside diced colorful bell peppers and onions until the meat is cooked and vegetables soften slightly. Pineapple chunks contribute sweetness and texture, while a sauce made from pineapple juice, rice vinegar, dark brown sugar, ketchup, and soy sauce adds a characteristic sweet and sour profile. Cornstarch slurry thickens the sauce to a shiny glaze that coats the ingredients.

The finished dish provides a combination of tender meat, softened vegetables, and a flavorful, balanced sweet and sour sauce. Serving it over white rice complements the sauce and provides a filling meal suitable for a quick evening dinner.

There are no additional notes or storage tips provided, but the recipe's straightforward method makes it accessible for weekday cooking.
