Description

These Sweet Bread Rolls make use of warm milk mixed with yeast and brown sugar to create a foamy yeast starter that activates the leavening process. Flour, lemon zest, and salt are mixed separately with the wet ingredients consisting of melted butter, eggs, and condensed milk. The combined dough is kneaded until elastic and sticky, then left to rise in a warm spot until doubled. After punching down the dough, it is rolled out and divided into equal portions before being shaped into rolls.

Before baking, an egg wash is applied to give the rolls a shiny, golden crust. Sesame seeds may be added for texture and flavor. The resulting bread rolls have a soft crumb and subtly sweet flavor with a hint of citrus from the zest. They are satisfying when fresh and can complement both sweet and savory accompaniments.

  • 1/3 cup milk about 105°F, warm
  • 2 1/4 teaspoons active dry yeast 1 packet
  • 2 tablespoons brown sugar packed
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon lemon optional or use orange zest, zest
  • 1/2 teaspoon salt
  • 4 tablespoons butter unsalted
  • 3 egg slightly beaten, large
  • 1 cup sweetened condensed milk
  • 1 egg beaten for the egg wash
  • sesame seeds optional

Instructions

  1. In a small combine the warm milk with the yeast and brown sugar, and mix with a fork. After that, let the mixture sit for 10 minutes until the yeast foams up. If it doesn't foam up repeat this step.
  2. Add the flour, lemon zest, and salt to the bowl of a stand mixer fitted with the whisk attachment, and mix everything together.
  3. In another large bowl, combine the melted butter, eggs, condensed milk, and foamed yeast mixture and stir together until combined.
  4. Change the whisk attachment with the hook attachment.
  5. Add the wet ingredients to the dry ingredients and mix using the dough hook for about 3-5 minutes on medium speed. The dough will be sticky and elastic.
  6. Place the bowl with the dough in a warm place and let it rise until doubled in size, about 1-2 hours.
  7. After that, punch down the dough to let some of the air out.
  8. Transfer the dough onto a clean, lightly floured surface and knead it a couple of times.
  9. Now roll it into a long log and cut it into 12 equal portions of dough. Roll each portion into a long 12-inch rope.
  10. Then make a knot with the rope of dough. Next, take one end that comes from underneath, roll it over, and then press it in the middle. After that, take the other end, and fold it under, and pinch it in the middle.
  11. Preheat oven to 350°F.
  12. Brush the rolls with the egg wash and sprinkle with sesame seeds.
  13. Bake in the preheated oven for about 25 to 30 minutes or until golden brown in color.
  14. Serve warm or at room temperature.
