Sweet Chicken Asado

Sweet Chicken Asado is a Filipino dish featuring browned chicken thigh pieces simmered in a sauce made from soy sauce, brown sugar, and hoisin, accented with bay leaves and black pepper. The slow simmer produces tender meat in a thick, savory-sweet sauce, suitable as a main dish served over steamed rice.

Description

The recipe starts by searing chicken thighs in cooking oil until golden and cooked through, then cutting them into small cubes. Aromatics of garlic and finely chopped onion are sautéed in the same pot to capture flavor, before returning the chicken to cook with soy sauce, brown sugar, and bay leaves. This mixture is caramelized slightly before water is added to create a simmering sauce.

The dish simmers for 30 to 40 minutes or until the chicken is fork-tender and the sauce thickens into a glossy, flavorful coating. Hoisin sauce is incorporated near the end to add depth, and black pepper adjusts the seasoning. It is best served hot with rice, which complements the sweet and savory sauce.

Sweet Chicken Asado also works as a filling for steamed buns, expanding its use beyond a traditional entree. The balance of sweet, savory, and aromatic elements defines the character of this dish.
