Sweet Pea, Mint and Goat Cheese Toast
Description
This recipe features slices of toasted beer bread rubbed with fresh garlic to impart a subtle savory note. Each slice is spread with soft goat cheese that serves as a creamy, tangy contrast to the peas and mint topping. Fresh or thawed peas provide a bright, slightly sweet texture that complements the herbal freshness of the small mint leaves. A finishing touch of fresh lemon juice adds brightness and a slight acidity to balance the richness of the cheese and bread, while sea salt and freshly ground black pepper season and enhance all the flavors. The toast should be consumed immediately to enjoy the contrast of warm bread and cool toppings. This simple assembly delivers fresh, balanced flavors in an easy-to-make bite suitable as a light snack, appetizer, or part of a brunch spread.
