Sweet Potato Brownies
Ingredients
- 1 cup sweet potato mashed
- 1 cup almond butter creamy
- ¼ cup cocoa powder
- ¼ cup pure maple syrup
- ½ cup dark chocolate chips
Instructions
- First, preheat the oven to 350 degrees Fahrenheit. Line an 8 inch by 8 inch square pan with parchment paper.
- In a large mixing bowl, add the mashed sweet potatoes, almond butter, cocoa powder, and maple syrup. Stir to combine.
- Then, fold in the chocolate chips.
- Transfer the brownie batter to the prepared pan. Smooth out into an even layer.
- Bake for 18 to 21 minutes, or until a toothpick inserted comes out with only moist crumbs.
- Finally, remove the pan from the oven. Allow the sweet potato brownies to cool before slicing and serving.

- Cook the mashed potatoes before making this recipe. You can roast them in the oven, microwave them, or boil the potatoes. Then, mash with a fork or potato masher.
- If you boil the potatoes, be sure to squeeze out any excess water.
- If desired, replace the almond butter with creamy all-natural peanut butter.
- Fully cool before slicing.
- Store in an airtight container at room temperature for up to 4 days.
- Store in the fridge for up to 7 days or in the freezer for up to 2 months.
