Ingredients

  • 2/3 cup self-rising flour or all-purpose flour + 2/3 teaspoon baking powder
  • 1/3 cup whole wheat pastry flour
  • 1/4 cup sweet potato I boiled mine and mashed it, mashed
  • 1/2 teaspoon lemon juice
  • 3-4 Tbsps water
  • 1 Tablespoon coconut oil or organic canola oil
  • 3 tbsp raw sugar the doughnuts are mildy sweet to balance the caramel, or equivalent sweetener of choice
  • 1/8 teaspoon cardamom chai spice recipe below, powder, or chai spice blend

Instructions

  1. Mix the sugar in the sweet potato mash and add all the other ingredients except water and mix for a few seconds. Add a Tbsp of water at a time and mix/knead into a soft non too sticky dough.
  2. Oil hands, Divide mixture into an inch balls and place on parchment.
  3. Bake in preheated 375 degrees F for 10-12 minutes, or until the tops do not look liquidy.
