Ingredients

  • 2 sweet potato about 14 oz / 400 g, peeled and grated, medium
  • ½ cup all-purpose flour plain flour 60g
  • 2 egg large
  • ¼ cup milk 60ml
  • ½ cup cheddar cheese 59g, grated
  • 1 onion finely chopped, small
  • 2 garlic minced, cloves
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • 2 tablespoon neutral cooking oil for frying, more if needed, generic cooking oil

Instructions

  1. Peel and grate the sweet potatoes, then squeeze out any excess moisture using a clean kitchen towel or paper towel.
  2. In a large bowl, whisk together the flour, eggs, milk, salt, pepper, and smoked paprika until you have a smooth batter.
  3. Stir in the grated sweet potato, cheese, chopped onion, and garlic until everything is well combined.
  4. Heat 1-2 tablespoon of oil in a large skillet over medium heat. Drop spoonfuls of the sweet potato mixture into the pan and flatten each slightly with the back of a spoon to form fritters.
  5. Fry each fritter for about 3-4 minutes per side, or until golden brown and cooked through. Cook in batches if needed, and add more oil if necessary.
  6. Transfer the fritters to a plate lined with paper towels to drain any excess oil. Serve hot, with a dipping sauce like sour cream, yogurt, or salsa.
