Sweet Potato Fritters Recipe

Sweet Potato Fritters combine grated sweet potatoes with aged cheddar, green onions, and eggs, seasoned and pan-fried into crispy, golden patties. Served with a tangy lemon yogurt sauce made from Greek yogurt, lemon zest, juice, and finely minced garlic, these fritters have a balance of creamy, crisp, and bright flavors.

Description

The recipe starts by peeling and grating sweet potatoes, then mixing them with grated cheddar cheese and chopped green onions. Eggs seasoned with salt and pepper bind the mixture. Individual fritters are formed by hand and fried in oil, achieving a crispy exterior while maintaining a tender interior. Pressing them gently during cooking helps maintain their shape and even browning.

The accompanying lemon yogurt sauce provides a fresh, zesty counterpoint to the rich, savory fritters. This dip combines plain Greek yogurt, lemon zest, lemon juice, and finely minced garlic for a creamy texture and bright flavor that complements the sweet potato.

The fritters can be kept warm in a low oven while cooking batches, making serving easier.

Ingredients

Servings
  • 2 medium sweet potato about 1 lb
  • 1 cup cheddar cheese grated, aged
  • ¼ cup green onion plus a few extra for garnish, chopped
  • 2 large egg
  • ½ teaspoon salt sea salt
  • ½ teaspoon black pepper
  • neutral cooking oil for frying (see notes, generic cooking oil

The lemon yogurt

  • ½ cup yogurt plain, Greek
  • lemon zest from 1
  • 1 tablespoon lemon juice fresh is best
  • 1 small garlic very finely minced, clove

Instructions

  1. Peel the sweet potatoes then grate them using the large holes on your cheese grater. Put them in a large bowl and add the cheddar cheese and chopped green onions.
  2. Whisk the eggs with sea salt and pepper and add them to the bowl with the sweet potatoes. Mix everything together well.
  3. Heat a medium-sized frying pan over medium heat. Once the pan is hot, add a splash of oil. Take a handful of the sweet potatoes and form it into a fritter - don't worry if it doesn't stick together well. Working in batches, and adding more oil to the pan between batches, fry the fritters in the hot pan for 3-4 minutes per side. Press the tops of the fritters down gently, so they stick together better and adjust the heat if they start to get too brown. Set the cooked patties on a baking sheet in your oven with your oven on to its lowest setting to keep them warm while you pan-fry the rest.
  4. While the sweet potato fritters are cooking, prepare the lemon yogurt. In a small bowl mix the yogurt, lemon zest, lemon juice, and garlic.
  5. Serve the sweet potato fritters with the lemon yogurt and some sliced green onions over top.

Notes

  • The amount of oil needed depends on the pan type: cast-iron requires more for crispiness, non-stick less but yields a softer crust.
  • Nutritional info is based on using 2 tablespoons of oil for frying.
