Ingredients

  • 1 tbsp olive oil
  • 2 sweet potato peeled and diced into small cubes
  • 1 cup kale
  • ½ onion diced
  • 1 bell pepper diced
  • 3 sausage links sliced into rounds, fully cooked
  • ½ tsp smoked paprika
  • salt to taste
  • black pepper to taste
  • green onion or fresh parsley or avocado slices, chopped

Instructions

  1. Heat the Oil: In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and cook, stirring occasionally, until they start to soften and become golden brown, about 10 to 12 minutes.
  2. Add Veggies: Add the kale, diced onion, and bell pepper to the skillet. Sauté until the veggies are tender, about 5 minutes.
  3. Add Sausage and Seasoning: Stir in the sliced sausage links, smoked paprika, salt, and pepper. Cook for another 5 to 7 minutes, until the sausage is heated through and everything is nicely browned.
  4. Serve and Enjoy: Garnish with chopped green onions, parsley, or avocado slices, if desired. Serve warm!
