Sweet Potato Latkes Recipe

Sweet Potato Latkes are crispy, baked pancakes made by combining grated sweet potatoes with flour, eggs, green onions, garlic, and spices. They bake on parchment-lined sheets with oil, then finish with melted cheddar cheese on top. Served hot with sour cream and additional green onions, they offer a satisfying contrast between crisp edges and tender centers with a mild, savory flavor.

Description

This Sweet Potato Latkes recipe uses grated sweet potatoes mixed with flour, finely chopped green onions separated into white and green parts, eggs, garlic, paprika, salt, pepper, and cheddar cheese. The batter is formed into flat rounds on baking sheets with oil, pressed to about a quarter-inch thickness, then baked until golden and crisp on top. Cheese is sprinkled on after baking initially, then melted under the oven's heat for a little longer.

The baking method offers a less oily alternative to frying while still achieving crispness by drizzling oil underneath and on top of the latkes. The combination of sweet potatoes and savory spices, along with cheddar cheese, provides rich flavor and texture contrasts. Sour cream served alongside adds creaminess and a tangy balance.

Sweet Potato Latkes can be served warm as a side dish or appetizer. The recipe yields about 18 latkes, suitable for sharing. The careful layering of ingredients and baking technique ensures the latkes hold together well while developing a crisp exterior.

Ingredients

Servings
  • 4 tablespoons neutral cooking oil divided, generic cooking oil
  • 1 ½ lb sweet potato about 2 medium
  • ½ cup flour gluten-free, if needed
  • 6 green onions whites and green parts chopped separately
  • 2 large egg
  • 1 large clove garlic finely minced
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 1 teaspoon pepper
  • ½ cup cheddar cheese grated
  • sour cream to serve

Instructions

  1. Preheat oven to 400 degrees. Line 2 baking sheets with parchment paper. Drizzle each baking sheet with 1 tablespoon of oil.
  2. Peel and grate the sweet potatoes using the large holes on your grater.
  3. Place the grated sweet potatoes into a large bowl and add the flour, the white parts of the green onions, the eggs, garlic, paprika, salt, and pepper and mix together well.
  4. Use a large cookie scoop or ¼ cup measuring cup and make 18 latkes, dividing them between the 2 baking sheets. Press them down so that they are about ¼ inch thick. Drizzle the remaining 2 tablespoons of oil over the tops of the latkes.
  5. Bake for 40 minutes, or until the tops start to brown and crisp. Sprinkle a little cheese on top of each latke then put them back in the oven for 5 minutes.
  6. Serve the latkes hot out of the oven with some sour cream and the green onions on top.
