Sweet Potato Pie

Nothing says it's the holidays like a sweet, richly spiced sweet potato pie! So easy to make and always impresses guests!

Ingredients

Servings
  • one inch pie crust bottom only
  • 2 cups sweet potatoes baked
  • 2 tablespoons butter melted, salted
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • ½ cup whipping cream
  • 1 tablespoon flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 2 large egg beaten

Instructions

  1. Preheat your oven to 350 °F.
  2. Place your pie pastry into the bottom of a 9 inch pie plate and set aside.
  3. In a large mixing bowl, mix together the sweet potato and melted butter. Add in the sugars, cream, flour, vanilla extract, and pumpkin pie spice. Beat until combined, then taste test. Add more spice if needed.;
  4. Add in the eggs and then beat on medium speed until the mixture is smooth.
  5. Pour the filling into the prepared pie plate.
  6. Bake in the preheated oven for 55-65 minutes, until a knife inserted into the center comes out clean.
  7. Remove and let cool.

  • You can serve this warm or cold!
