Sweet Potato Ribbons Casserole Recipe
Description
Sweet Potato Ribbons Casserole is made by tossing slender sweet potato ribbons in a syrup reduced from coffee, maple syrup, bourbon, coconut sugar, cayenne pepper, and sea salt. This syrup infuses the sweet potatoes with complex, warm, and slightly spicy flavors. The casserole is then baked with a pecan topping that includes softened butter, almond flour, sage, vanilla, and cinnamon, which crisps up in the oven, adding a contrasting texture and aromatic spice notes.
The cassserole balances tender sweet potato softness with the crunchy, buttery pecan topping. The combination of coffee and bourbon in the syrup provides depth and subtle bitterness to highlight the natural sweetness of the potatoes. The cayenne gives a mild hint of heat, rounding out the flavor.
This dish works well as a festive side or a vegetarian entrée. It pairs nicely with meats or a salad and can be served warm from the oven to maintain the topping’s crunch. The recipe suggests using coffee saved from brewing for convenience and recommends particular grocery products for ease of preparation.
Ingredients
- ½ cup coffee see notes, strong brewed
- ¼ cup maple syrup or brown sugar
- ¼ cup bourbon
- ¼ cup coconut
- ½ teaspoon salt sea salt
- ¼ teaspoon cayenne pepper
- 2 tablespoons butter dairy free butter if needed
- 1 ¼ lb sweet potato ribbons
The Pecan Topping
- ¼ cup butter softened
- 1 ½ cups pecans coarsely chopped
- ½ cup almond flour
- 1 teaspoon cinnamon
- 1 teaspoon sage
- 1 teaspoon vanilla
Instructions
- Preheat your oven to 425 degrees Fahrenheit. Grease a 9x11 inch baking dish. Add the coffee, maple syrup, bourbon, coconut sugar, cayenne, and sea salt to a small pot over high heat. Bring it to a boil and continue to boil it rapidly until it reduces to about a ½ cup, about 10 minutes. Stir in the butter.
- While the syrup is boiling, prepare the topping. Add all the topping ingredients to a medium-sized bowl and mix together well. Using your hands is the easiest for this job.
- Place the sweet potato ribbons in a large bowl. When the syrup has reduced to a ½ cup, let it cool slightly then pour it over the ribbons. Toss gently to coat well.
- Place the sweet potato ribbons in the greased casserole dish and cover the top with the pecan topping. Bake in the oven for 30-35 minutes, or until the ribbons are soft and the pecans have toasted.
Notes
- Use leftover brewed coffee to prepare the syrup reduction without making extra coffee.
- For an attractive presentation, wind some sweet potato ribbons around pieces of pecan topping.
- Pre-sliced sweet potato ribbons from brands like Culinary Cuts simplify preparation; about two 10-ounce bags are recommended.
