Sweet Potatoes Au Gratin Recipe

Sweet Potatoes Au Gratin layers thinly sliced sweet potatoes in a creamy mixture of heavy cream, butter, garlic, thyme, cornstarch, and seasonings. After baking, it’s topped with Parmesan cheese for a golden crust. The result is a tender, flavorful casserole with subtle herb and garlic notes.

Description

Sweet Potatoes Au Gratin begins with peeling and thinly slicing sweet potatoes into 1/8-inch rounds and fanning them in a 9x13-inch baking dish. A creamy sauce made from heavy cream, cornstarch, melted butter, minced garlic, fresh thyme, salt, and pepper is whisked and poured between layers and over the potatoes to prevent browning and build flavor.

The casserole bakes at 400°F for 30 minutes before being sprinkled with Parmesan cheese and baked an additional 10 minutes, developing a lightly crisped, golden top. The cornstarch thickens the sauce, yielding a luscious texture coating tender sweet potato slices.

This gratin offers a comforting side dish with a balance of sweetness from the potatoes and savory richness from the cream and cheese. The fresh thyme introduces an aromatic herbal note that complements the garlic's pungency. It is suitable for holiday meals or as a flavorful accompaniment to roasted meats.

Ingredients

Servings
  • 3 pounds sweet potato
  • 1 1/4 cup heavy cream
  • 6 tablespoons butter
  • 6 cloves garlic minced
  • 2 tablespoons thyme chopped, fresh
  • 1 teaspoon cornstarch
  • 1/3 cup Parmesan Cheese
  • salt and pepper

Instructions

  1. Preheat the oven to 400 degrees F. Pull the leaves off the thyme stems. Discard the stems and roughly chop the leaves.
  2. Place the cream and cornstarch in a small bowl or pot. Whisk well. Add the butter, garlic, thyme, 1 1/4 teaspoon salt, and 1/2 teaspoon pepper. Heat over the stovetop, or in the microwave, just until the butter melts. Then turn off the heat and whisk again.
  3. Peel and slice each sweet potato one by one. Slice the potatoes into very thin rounds, 1/8-inch thick. Arrange each potato in a 9x13-inch baking dish, fanning it out in a pretty pattern.
  4. Before peeling and slicing the next sweet potato, pour a little of the cream mixture over the potato slices in the pan, so it does not brown while you work on the other potatoes.
  5. Repeat until all the sweet potatoes are sliced and arranged prettily in the baking dish. Then pour the remaining cream mixture over the top.
  6. Bake for 30 minutes. Sprinkle Parmesan cheese over the sweet potatoes. Then bake another 10 minutes until the cheese is golden. Serve warm.
