Ingredients
For the potato chips:
- 1 medium sweet potato 200 grams
- 1/2 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon chile powder
- Salt/Pepper
For the kale chips:
- 4 cups torn kale leaves packed
- 2 teaspoons olive oil
- salt
- 1 cup reduced-fat cheddar cheese grated
Instructions
- Preheat your oven to 375 degrees.
- Peel the sweet potato and run it through a mandolin to create very thin slices, about 1/8 of an inch thick. Repeat until all the potato is sliced.
- Place the potato into a large bowl and drizzle with olive oil. Toss to coat so that each slice gets evenly covered in the oil. Lay the potato slices in a single row on a large cookie sheet.
- In a small bowl, combine the garlic powder, cumin, paprika, and chile powder. Sprinkle half of the mixture all over the potatoes, and then sprinkle with a little bit of salt and pepper.
- Bake the chips for 10 minutes. Then, flip each slice and continue baking until brown and the edges begin to curl up and crisp, about another 10-13 minutes. Remove from the oven and let cool while the kale bakes. The center of some of the potatoes may feel a little soft, but they will crisp up once cooled.
- While the potatoes cook, place the torn kale leaves into a bowl and drizzle in the olive oil. Toss to coat and then season with a few pinches of salt.
- Lay the kale leaves in a single row on a cookie sheet. Place them into the oven once the potatoes are done and bake until golden brown and crispy, about 5-7 minutes.
- Place half of the potatoes in a single layer in a large, oven-proof skillet and then top with half of the kale leaves. Sprinkle half of the cheese on top and then top with the remaining potato and kale chips. Sprinkle with remaining cheese.
- Place the skillet back into the oven and cook the nachos until the cheese is just melted.
- Serve immediately and DEVOUR!
