Sweet Sriracha Chicken Tacos
Description
Chicken is first seasoned with kosher salt then marinated in a mix of sriracha, honey, cumin, sweet paprika, and lime juice, which infuses it with sweet heat and smoky spice. The marinade also helps the chicken brown quickly on a hot grill or grill pan while cooking through evenly. Once rested, the chicken is sliced thin and layered inside warmed tortillas.
The tacos are enhanced with a creamy avocado cream made by blending avocado, sour cream, lime juice, cilantro, and seasoning, adding richness and brightness. Shredded cabbage provides a fresh crunch contrast, while additional sriracha drizzles intensify the spicy notes. Fresh cilantro finishes the tacos with herbaceous flavor and color.
This recipe recommends using either boneless chicken breasts or thighs. The avocado cream can be prepared without a food processor by finely mincing cilantro and mashing ingredients together. Corn or flour tortillas are suitable bases, warmed before serving. These tacos combine varied textures and vibrant flavors ideal for casual meals.
Ingredients
Chicken
- 2 chicken breast or 1- 1 1/2 lbs bonless thighs, boneless
- 3 tablespoons sriracha
- 1 tablespoon honey
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika sweet
- 1 tablespoon lime juice fresh
- 1-2 teaspoons kosher salt
Avocado Cream
- 1 avocado
- 1/4 cup sour cream
- 2 teaspoons lime juice fresh
- 3 tablespoons cilantro fresh, minced
- pinch kosher salt
- pinch cumin
For Tacos
- 6 corn tortilla shell small soft or flour tortilla shells
- 1 - 2 cups cabbage shredded
- sriracha
- cilantro fresh
Instructions
- Season chicken with kosher salt.
- In a large sealable plastic bag add sriracha, honey, cumin, paprika, and lime juice. Seal and use hands to mix it all from the outside of the bag. Season chicken with salt and add chicken to bag, mixing it and coating the chicken. Put in fridge and let marinate for at least 30 minutes and up to 24 hrs (the longer the better!).
- When you're ready to eat, heat grill or grill pan. High for the grill and medium for a grill pan. Turn grill down to medium and grill chicken until done, approximately 6-7 minutes on each side, until the center reaches 165 degrees. Note that the marinade will make the skin brown quickly. Remove chicken from grill and let rest for a couple of minutes.
- Meanwhile, add avocado, sour cream, lime juice, cilantro, and salt to a food processor and cream.
- Slice chicken and add to tortillas. Top with shredded cabbage and drizzles of the avocado cream, sriracha, top with fresh cilantro and enjoy!
Notes
- You can make your own flour or corn tortillas to use if desired for added freshness and flavor.
- Boneless chicken breasts or thighs both work well for the marinade and grilling process.
- If you don’t have a food processor, mince cilantro finely and mash the avocado, sour cream, lime juice, and seasonings together for the avocado cream.
