Swiss Cheese Fondue
Description
Swiss Cheese Fondue is a classic melted cheese dish primarily showcasing Gruyère cheese and dry white wine, thickened with cornstarch. The cheese is shredded and gradually melted into warmed wine rubbed with garlic to infuse aroma. Lemon juice adds brightness and acidity, which balances the richness of the cheese. Kirsch or brandy introduces a subtle fruity note. The blend is seasoned with a pinch of nutmeg, white pepper, and paprika for a nuanced flavor profile without overpowering the cheese.
The texture is smooth and creamy, ideal for dipping various breads or vegetables. Consistency can be adjusted with reserved wine if the fondue becomes too thick. The gentle heating and stirring ensure the cheese melts evenly and remains homogenous, avoiding curdling or separation.
This fondue is typically served warm in a fondue pot to maintain its texture throughout the meal. It suits small groups sharing a cozy appetizer or main dish and pairs well with fresh crusty bread for dipping. The recipe yields enough to serve 4-6 people as a main or 8-10 as an appetizer.
