Description

Swiss Cheese Fondue involves finely grating two to three different cheese varieties and melting them slowly with dry white wine in a fondue pot. The pot is first rubbed with garlic to impart subtle flavor. A slurry of kirsch and cornstarch is added during melting to stabilize and thicken the mixture, creating a creamy texture.

Seasonings include freshly grated nutmeg and cracked black pepper, added at the end for aromatic warmth and spice. The fondue is kept warm on a burner to maintain perfect dipping consistency throughout the meal.

This fondue is traditionally served with chunks of bread, vegetables, or small boiled potatoes, making it a social dining experience. Its smooth, velvety texture and cheesy richness combine with the wine and kirsch for nuanced flavor.

  • lbs cheese use 2-3 different cheeses
  • 8 oz white wine dry
  • 1 garlic clove
  • 1 tbsp cornstarch
  • tbsp kirsch
  • ¼ tsp nutmeg grated
  • ¼ tsp black pepper cracked

Instructions

  1. Finely grate all the cheeses.
  2. Peel and cut vertically the garlic clove.
  3. Mix the Kirsch and cornstarch together to make a slurry.
  4. Rub the cut garlic clove over the base and sides of the fondue pot to add a hint of garlic flavor. 
  5. Add the grated cheeses into the fondue pot, pour in the wine.
  6. Place the pot over a medium heat. Stir slowly and consistently. The cheese will melt. Once melted, add the cornstarch and Kirsch slurry to thicken and emulsify the fondue.
  7. When the fondue looks like creamy melted cheese, add grated nutmeg and freshly cracked black pepper.
  8. Remove the fondue pot from the heat and place it on a burner to keep warm. Eat immediately.
