- 4 eggplant
- 400 gms swordfish 1 lb
- 15 green olives pitted and halved
- 2 tbsp capers rinsed
- 3 tbsp extra virgin olive oil
- 140 gms tomato paste concentrated, 5 oz
- 2 onion chopped, big
- 3 celery chopped, stalks
- 150 ml red wine vinegar 5 oz
- 1 tbsp sugar
- salt to taste
Notes
- This Swordfish Caponata is best eaten at room temperature or cold, and it tastes even better the next day.
