Taco Bell Meat Recipe

This Taco Bell Meat Recipe recreates the seasoned ground beef filling used in tacos by mixing ground beef with water, taco seasoning, cornstarch, and optional cocoa powder for color. Cooking the mixture results in a thick, flavorful meat that can be used in hard or soft taco shells or other Taco Bell-style dishes. Its texture is thick and slightly sticky, achieved through simmering to evaporate moisture and concentrate flavors.

Description

The recipe starts by blending ground beef with water, taco seasoning, cornstarch to thicken, and dark cocoa powder to adjust the color. The mixture is stirred until sticky, then cooked in a greased skillet with additional water added. Covered briefly, the meat cooks evenly before simmering uncovered to reduce liquid and thicken the filling.

The cooking process breaks down the beef into small crumbles bound together with cornstarch, creating a textured filling reminiscent of the fast-food style. The cocoa powder enhances the color without adding sweetness.

The prepared meat can be served in taco shells or incorporated into various dishes inspired by Taco Bell offerings. Seasoning can be adjusted to taste during cooking for desired saltiness or spiciness.

Alternatively, the meat can be prepared in a pressure cooker for convenience, using high pressure and natural release before further sautéing to thicken the mix. This offers a quicker but similarly textured outcome suitable for home cooks.

Ingredients

Servings
  • 2 pounds ground beef (85% lean 15% fat)
  • 2 1/3 cups water or beef broth, divided
  • 5 tablespoons taco seasoning (homemade or store-bought), or to taste
  • 2 tablespoons cornstarch
  • 1 teaspoon dark cocoa powder for color (optional, unsweetened
  • salt to taste

Instructions

  1. Combine ground beef, 1 ⅔ cups water, taco seasoning, cornstarch, and cocoa powder in a mixing bowl.
  2. Mix by hand or with a mixer until all the ingredients are fully incorporated. It should be sticky and almost like a thick batter.
  3. Grease a large nonstick skillet or Dutch oven with cooking oil. Add the meat mixture. Pour the remaining ⅔ cup water in, cover, and cook on medium-high heat for 5 minutes. Using a spatula to break up the meat completely. Allow to simmer on low heat, uncovered, until the water evaporates and the meat mixture thickens, 20-30 minutes. Taste along the way and season with salt if needed.
  4. Serve with hard or soft taco shells, or use it to create your favorite Taco Bell item!

Notes

  • Pressure cooker method: Add 2/3 cup water and meat mixture, cook on high pressure 7 minutes, then natural release 10 minutes.
  • After pressure cooking, break up meat with a spatula and sauté to thicken the mixture as needed.
