Taco Bell Mexican Pizza
Description
This Mexican Pizza replicates the layers of a classic Taco Bell favorite by frying flour tortillas until crispy and stacking them with seasoned ground beef, refried beans, and a generous spread of enchilada sauce. A shredded blend of Mexican cheeses melts on top, binding the flavors and textures together. Cooking the ground beef with taco seasoning and water creates a flavorful, moist filling. The refried beans are warmed separately to spread easily.
The recipe involves frying each tortilla in vegetable oil until crisp and golden, which provides the signature crunch to the base and top layers. Assembly includes layering beans and meat on the first tortilla, topping it with the second fried tortilla, and finishing with sauce and cheese before baking briefly to melt the cheese. The baked pizza offers a mix of crunchy, creamy, and savory elements.
This dish can be served with fresh diced tomatoes, sliced green onions, olives, and sour cream to balance the richness with fresh and tangy notes. It is suitable for a casual dinner or as a fun meal when using leftover taco meat and beans. Reheating instructions include oven or air fryer methods to restore crispness and melt cheese if made ahead.
Optional tips include trying an air fryer to crisp tortillas and melt cheese quickly, adding red pepper flakes or jalapenos for spice, and storing components separately before assembly to preserve texture. This recipe allows customization of toppings and works well as a way to repurpose leftover Mexican-style ingredients.
Ingredients
Pizza
- 1 pound ground beef
- 1 (1-ounce) taco seasoning packet
- ⅔ cup water
- 1 cup vegetable oil
- 8 flour tortillas taco size
- 1 (15-ounce) can refried beans
- 1 (10-ounce) can Red Enchilada Sauce
- 2 cups Mexican cheese blend shredded
Toppings
- diced tomatoes
- green onion sliced
- olives sliced
- sour cream
Instructions
- Preheat oven to 400°F. In a large saucepan or skillet over medium heat, cook ground beef until no longer pink and crumbly. Drain grease.
- Increase heat to medium-high heat. Add taco seasoning and water and cook until water is evaporated making sure to stir occasionally (about 5 minutes).
- In a separate large skillet, heat 1 cup vegetable oil over medium heat. Add one of the 8 flour tortillas (taco size) and cook for about 3-4 minutes (flipping frequently) until crisp. Continue with the rest of the tortillas. Set aside.
- Meanwhile, heat the 15-ounce can of refried beans in a microwaveable-safe bowl. This will make it easier to spread the beans onto the tortilla shells.
- On each fried tortilla, slather a generous layer of refried beans. Then top with seasoned ground beef.
- Place another tortilla on top. Slather about two tablespoons from the 10-ounce can of enchilada sauce on top. Place some of the 2 cups of shredded Mexican cheese blend on top of the sauce. Continue assembling the rest of the pizzas.
- Place the pizzas on a large nonstick baking sheet and bake for about 8-10 minutes or until the cheese is melted. Serve with your favorite toppings like diced tomatoes, sliced green onion, sliced olives, and sour cream.
Notes
- Store leftover pizzas and toppings separately in airtight containers for up to 4 days in the refrigerator.
- Reheat pizzas in a 350F oven on a baking sheet for about 10 minutes to restore crispness and melt cheese.
- Air fryer reheating is quick and effective; crisp tortillas first then melt cheese after assembly.
- Frying the tortillas before assembly is essential for the pizzas signature crunch; do not skip this step.
- Spice up the pizza by adding red pepper flakes or jalapenos to the meat or toppings.
- Utilize leftover taco meat and beans for an easy homemade Mexican pizza meal.
