Taco Casserole
Description
Taco Casserole combines seasoned ground beef with black beans, diced tomatoes with green chilies, and chunky salsa, layered between crushed tortilla chips and shredded Mexican cheese. The mixture is assembled in a baking dish, then baked until the cheese melts and becomes bubbly. The contrast of the soft meat mixture with the slightly crunchy chips adds texture. Sour cream and green onions added after baking provide cool creaminess and a fresh bite. This casserole can serve as a filling main dish featuring familiar, layered taco ingredients baked into a casserole form.
The dish is prepared by first browning and seasoning the ground beef, then mixing it with beans, tomatoes, and salsa before layering with chips and cheese. Baking melds the flavors and melts the cheese evenly. The sour cream and green onions added just before serving freshen the rich casserole and add balance.
The casserole works well served fresh from the oven as a casual dinner option. It can be refrigerated as leftovers in a sealed container for up to five days, allowing for convenient meal planning. Moderate crushing of chips helps them hold their shape without turning to crumbs, providing a nice texture contrast.
Ingredients
- 2 pounds ground beef
- 2 taco seasoning 1 ounce packets
- 1/2 cup water
- 1 black beans 15 ounce can, drained and rinsed
- 1 diced tomatoes with green chilies 14.5 ounce can, undrained
- 1 1/2 cups salsa chunky
- 2 cups Mexican cheese blend shredded
- 4 cups tortilla chips lightly crushed
- 1 cup sour cream
- 2 green onions thinly sliced
Instructions
- Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
- In a large skillet over medium-high heat, brown the ground beef, breaking it up as it cooks, about 8-10 minutes.
- Drain excess fat, then add taco seasoning and 1/2 cup water. Simmer for 2 minutes.
- Stir in black beans, diced tomatoes with chilies, and chunky salsa. Cook for another 2-3 minutes to combine flavors.
- Layer half of the crushed tortilla chips in the bottom of the prepared baking dish.
- Spread half of the beef mixture over the chips.
- Sprinkle 1 cup of shredded cheese over the beef.
- Repeat layers with remaining chips, beef mixture, and cheese.
- Bake uncovered for 25-30 minutes, until the cheese is melted and bubbly.
- Let cool for 5 minutes, then top with dollops of sour cream and sprinkle with sliced green onions before serving. Enjoy!
Notes
- Lightly crush tortilla chips so they form cohesive but still textured layers.
- Use mild salsa to keep the dish at a moderate spice level.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
