- 1 lb ground beef
- 1 small onion diced
- 2 cloves garlic minced
- 1 packet 1 oz taco seasoning
- 1 can 10 oz diced tomatoes with green chilies (Rotel)
- 1 can 15 oz black beans, drained and rinsed
- 1 cup corn kernels fresh, frozen, or canned, drained
- 1 cup salsa
- 6 small flour or corn tortillas cut in halves
- 2 cups shredded Mexican blend cheese
- ½ cup sour cream for serving, optional
- ¼ cup chopped fresh cilantro for garnish, optional

Instructions
Step No.1: Preheat Oven
- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Step No.2: Cook the Beef
- In a large skillet over medium heat, cook ground beef until browned. Add onion and garlic, cooking until softened. Drain any excess grease.
Step No.3: Add Seasonings and Fillings
- Stir in taco seasoning, diced tomatoes with green chilies, black beans, corn, and salsa. Simmer for 5 minutes until combined.
Step No.4: Layer the Casserole
- Place a layer of tortilla halves at the bottom of the baking dish. Spread ⅓ of the beef mixture over the tortillas, then sprinkle ⅓ of the cheese. Repeat the layers two more times.
Step No.5: Bake
- Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until the cheese is melted and bubbly.
Step No.6: Serve
- Let the casserole cool for 5 minutes before slicing. Garnish with sour cream and fresh cilantro, and enjoy!
