Taco Cornbread Casserole

The Taco Cornbread Casserole layers seasoned ground beef with a blend of cornbread mix, canned corn, and green chiles, topped with melted cheddar cheese. This casserole combines Mexican-inspired savory flavors and cornbread's mild sweetness, resulting in a satisfying comfort food dish. It’s baked until the cornbread topping is set and cheese is melted, making it ideal for a hearty dinner or casual gathering.

Description

Taco Cornbread Casserole starts with browned ground beef mixed with taco seasoning and diced tomatoes with green chiles (Ro*Tel brand). This flavorful meat layer is placed in a baking dish and covered with a cornbread batter made from Jiffy corn muffin mix, milk, egg, canned corn, and diced green chiles. The casserole is baked until the cornbread nearly sets, then topped with cheddar cheese and baked briefly more to melt and brown the cheese.

The contrast between the spicy, savory beef and the soft, slightly sweet cornbread topping is a key feature of this casserole. Toppings like sliced jalapeños and olives add extra texture and heat. The dish provides a convenient way to combine classic taco ingredients with southern-style cornbread in a handheld or plated meal.

It’s suitable for feeding a group and pairs well with additional taco toppings or a fresh salad. Preparation involves layering and baking in one dish for ease.
