Description

Taco Gnocchi Skillet starts by sautéing ground beef, pork, chicken, or turkey with taco seasoning until browned. Diced onion and green bell pepper are added for sweetness and crunch. Canned Rotel tomatoes and canned sweet corn join the mixture with optional chipotle pepper sauce, which gives the skillet a smoky heat and depth of flavor.

After simmering to reduce excess liquid, pre-cooked gnocchi is stirred in and cooked briefly to absorb flavors.   • 1 pound ground beef pork, chicken, or turkey
  • 1 tablespoon olive oil if using a lean protein, or canola oil
  • 1 pound gnocchi pre-made
  • 1 ounce can ROTEL
  • 1 packet taco seasoning
  • 1 medium white onion finely diced, or yellow onion
  • 1 green bell pepper finely diced
  • 1 .5 ounce sweet corn canned
  • 4 tablespoons chipotle pepper sauce optional, adds heat and smokiness, en adobo
  • 1 cup Oaxaca cheese shredded, or Monterey jack cheese
  • tortilla chips be generous!, crushed or tortilla strips

Instructions

  1. Heat oil in a pan over medium heat (if using a lean protein like ground chicken or turkey). Add ground meat and taco seasoning and cook for 5-7 minutes, using a wooden spoon to break the meat into smaller pieces. 
  2. Meanwhile, prepare gnocchi according to package directions. Strain and set aside until needed.
  3. Strain excess grease. It’s okay to leave just a little bit of grease behind for the next step.
  4. Add the diced onion and green bell pepper to the pan and cook for 3-4 minutes, stirring occasionally.  
  5. Add the can of Rotel, can of corn, and chipotle en adobo pepper sauce to the pan.
  6. Lower heat to medium-low and simmer for 8-10 minutes, uncovered. The liquid will reduce down a bit.
  7. Reduce heat to medium-low and add cooked gnocchi. Continue cooking another 2 minutes, gently stirring the gnocchi into the mix.
  8. Remove the pan from heat. Top with shredded cheese and cover with a lid until the cheese melts. For the finale, top with crushed tortilla chips or tortilla strips and dig in!

  • Cook gnocchi according to package directions before adding to skillet for best texture.
  • Drain and strain excess grease from browned meat to avoid greasy skillet; spreading meat on paper towels helps remove extra fat.
