Taco Lasagna

Taco Lasagna layers seasoned ground beef, vegetables, refried beans, enchilada sauce, tortillas, and cheddar cheese in a baked casserole. The combination results in a hearty dish blending Mexican flavors with the layered structure of lasagna, yielding a cheesy, saucy entrée with textured layers of meat, beans, and tortillas.

Description

Ground beef is browned with onions, green bell peppers, garlic, and taco seasoning, combined with diced tomatoes and corn, and mixed with refried beans. This savory mixture forms the flavorful base. The dish is assembled in layers: sauce, halved flour tortillas, shredded cheddar cheese, and the meat-bean mixture repeated to fill a baking dish. The final top layer includes tortillas, enchilada sauce, and shredded cheese.

Baking melds the layers, melts cheese, and allows flavors to develop into a cohesive casserole. The tortillas provide a soft but structural layer replacing traditional pasta sheets.

It can be served with traditional Mexican toppings such as cilantro, pico de gallo, sour cream, or guacamole to add freshness and contrast. This dish works well as a filling, comforting main course for family meals or casual gatherings.
