  • 1 pound ground beef lean
  • 1 onion diced, medium
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 packet taco seasoning 1 oz taco seasoning, 1 oz
  • 1 can diced tomatoes 14.5 oz, undrained
  • 2 cups beef broth
  • 3 cups elbow macaroni uncooked
  • 1 cup milk
  • 2 cups cheddar cheese shredded
  • 1 cup Monterey jack cheese shredded
  • 1/4 cup cilantro chopped, fresh
  • sour cream sliced jalapeños, crushed tortilla chips, optional toppings

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat, breaking it up as it cooks.
  2. Add diced onion, garlic, and bell pepper to the pot. Cook for 3-4 minutes until vegetables start to soften.
  3. Stir in the taco seasoning and cook for another minute.
  4. Add the diced tomatoes with their juice, beef broth, and uncooked macaroni to the pot. Stir to
  5. combine.
  6. Bring the mixture to a boil, then reduce heat to medium-low. Cover and simmer for about 12-15 minutes, or until the pasta is tender, stirring occasionally to prevent sticking.
  7. Once the pasta is cooked, stir in the milk and both types of cheese. Continue stirring until the cheese is fully melted and the sauce is creamy.
  8. Remove from heat and stir in chopped cilantro.
  9. Let stand for 5 minutes before serving to allow the sauce to thicken.
  10. Serve hot, with optional toppings if desired and enjoy!

Notes

  • Adjust the heat by using mild or hot taco seasoning, or add a diced jalapeño with the vegetables.
  • Refrigerate the leftovers in an airtight container for up to 5 days.
