  • 1 package rice with cilantro and lime
  • 1 pound ground beef
  • 2 Tablespoons taco seasoning
  • 1/4 cup salsa
  • ½ onion (diced)
  • 2 Roma tomato diced
  • 1 can corn 15 ounce can, Santa Fe variety
  • 1 can black beans (15 ounce can)
  • 1 avocado (diced)
  • lime for garnish
  • cilantro for garnish

Instructions

  1. Prepare rice according to package directions.
  2. On medium heat cook ground beef and onion in a large skillet till meat is cooked through and onions are transparent. Drain grease.
  3. Add taco seasoning and salsa to the skillet and stir into meat mixture with the spatula. Continue cooking on medium heat for approximately 5 minutes.
  4. Add a scoop of rice to the bowl.
  5. Top rice with taco meat, diced tomatoes, corn, beans and diced avocados.
  6. Garnish with lime slices and fresh chopped cilantro, if desired and enjoy!

Notes

  • Keep leftovers refrigerated in an airtight container and consume within 5 days for safety and freshness.
