  • 2 teaspoons olive oil
  • 1 pound ground beef I use 90% lean
  • 1/2 cup onion finely chopped
  • 1 red bell pepper seeded, cored and chopped
  • 1 packet taco seasoning
  • 15 ounce can diced tomatoes do not drain
  • 8 ounce can tomato sauce
  • 4 ounce can diced green chiles drained
  • 6 cups beef broth
  • 15 ounce can black beans drained and rinsed
  • 15 ounce can pinto beans drained and rinsed
  • 1/2 cup corn frozen
  • salt to taste
  • black pepper to taste
  • cilantro toppings
  • tortilla strips
  • sour cream
  • avocado
  • cheese

Instructions

  1. Heat the olive oil in a large pot over medium high heat. Add the ground beef.
  2. Cook for 5-6 minutes, breaking up the meat with a spatula.
  3. Add the onion and bell pepper and cook for an additional 3-5 minutes.
  4. Add the taco seasoning, diced tomatoes, tomato sauce, chiles, beef broth, black beans, pinto beans and corn to the pot. Bring to a simmer.
  5. Simmer for 15 minutes. Taste and add salt and pepper if needed. Serve immediately with toppings of your choice.
