Taco Tater Tot Casserole

Taco night just got better with this cheesy Taco Tater Tot Casserole! A fun, quick-prep dinner that’s full of flavor and perfect for family dinners or potlucks.

Ingredients

  • 1 pound ground beef lean
  • 3 tablespoons taco seasoning mix or a 1 ounce packet
  • 15 ounces black beans canned, drained and rinsed well
  • 1 cup corn kernels frozen, but could use canned if drained well or fresh
  • 1 cup mild salsa
  • 2 cups cheddar cheese divided, shredded
  • 32 ounces tater tots frozen

Optional Toppings For Serving

  • lettuce shredded
  • diced tomatoes
  • black olive sliced
  • sour cream

Instructions

  1. Preheat the oven to 375°F. Spray a 9x13-inch baking dish with cooking spray.
  2. Place a large skillet over medium heat. I've used a cast iron skillet, but you can use any large skillet. Add the ground beef until browned and cooked through, about 8-10 minutes. Break up the meat with a spatula as it cooks.
  3. Drain any excess fat from the pan. Add the taco seasoning mix, black beans, corn, salsa, and 1 cup of the shredded cheddar cheese to the meat mixture, stirring well until heated through.
  4. Transfer the beef mixture into the prepared baking dish, spreading it out evenly over the bottom of the pan.
  5. Set the frozen tater tots in a single layer in rows over the beef mixture, covering it completely.
  6. Place the casserole in the oven. Bake for 20-25 minutes or until the tater tots are crispy brown. Remove the casserole from the oven, then sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the tater tots. Return the casserole to the oven and bake for an additional 5 minutes or until the cheese is melted and bubbly.
  7. Remove the casserole from the oven. Allow it to cool for 5-10 minutes before serving. Top with extra toppings like shredded lettuce, diced tomatoes, sliced black olives, and a dollop of sour cream, if desired. Enjoy!
