Taco Tater Tot Casserole

Taco Tater Tot Casserole layers seasoned ground beef mixed with vegetables and black beans, topped with cheddar cheese and crispy tater tots. Baked until golden and bubbly, it offers a hearty, textural contrast between the savory meat mixture and the crunchy potato topping. A final salsa and enchilada sauce blend adds brightness and moisture to the finished casserole.

Description

This casserole begins by browning lean ground beef with onion and garlic, then seasoning with taco mix and combining with enchilada sauce, corn, bell peppers, and black beans. After thickening, the beef mixture is transferred to a baking dish and topped with shredded cheddar and frozen tater tots arranged evenly on top.

Baking at 400°F crisps the tater tots while melting the cheese underneath. After initial baking, a salsa and enchilada sauce mixture is spread atop the tater tots along with more cheese before returning to the oven to finish baking to bubbly, melted perfection.

The dish balances spicy, savory, and cheesy flavors with the slight sweetness of corn and the creaminess of cheese. Texture is an important aspect, contrasting the soft beef layer with crispy tater tots.

Optional toppings such as lettuce, tomato, sour cream, and avocado add freshness and coolness to the rich casserole when served.
