Description
This casserole begins by browning lean ground beef with onion and garlic, then seasoning with taco mix and combining with enchilada sauce, corn, bell peppers, and black beans. After thickening, the beef mixture is transferred to a baking dish and topped with shredded cheddar and frozen tater tots arranged evenly on top.
Baking at 400°F crisps the tater tots while melting the cheese underneath. After initial baking, a salsa and enchilada sauce mixture is spread atop the tater tots along with more cheese before returning to the oven to finish baking to bubbly, melted perfection.
The dish balances spicy, savory, and cheesy flavors with the slight sweetness of corn and the creaminess of cheese. Texture is an important aspect, contrasting the soft beef layer with crispy tater tots.

Ingredients
- 1 pound ground beef lean
- 1 onion diced
- 2 cloves garlic minced
- 1 ounce taco seasoning 1 packet
- 1 cup enchilada sauce divided
- 1 ½ cups corn kernels thawed, frozen
- 1 ½ cups bell pepper red, yellow or green, diced
- 15 ounces black beans 1 can, drained and rinsed, canned
- 3 cups cheddar cheese divided, shredded
- 16 ounces tater tots frozen
- ⅓ cup salsa

Instructions
- Preheat oven to 400°F.
- Brown ground beef, onion and garlic over medium high until no pink remains. Drain any fat.
- Stir in taco seasoning, ½ cup water, ⅔ cup enchilada sauce, corn, bell pepper & beans. Cook until thickened (about 5 minutes).
- Transfer the beef mixture to a 9×13 baking dish. Sprinkle with 1 ½ cups cheese and arrange tater tots on top.
- Bake 30 minutes. Combine salsa and remaining ⅓ cup enchilada sauce. Spread over tater tots and top with remaining cheese.
- Bake an additional 10 minutes or until cheese is melted & bubbly.
- Serve with desired toppings
