For Beef

  • 2-3 Lbs beef chuck roast fat trimmed
  • 20 oz pineapple crushed
  • 1 Cup apple cider vinegar
  • 2-3 chipotle in adobo sauce
  • 1/2 onion
  • 1 Tablespoon chili sauce
  • salt
  • black pepper

For Tacos

  • 12-15 corn tortillas
  • cotija cheese you may use feta cheese
  • lime juice
  • pineapple chunks
  • avocado cut into chunks

Instructions

For Beef

  1. In a blender, place the crushed pineapple, apple cider vinegar, chipotle, adobo sauce, onion and chili sauce. Blender until sauce is completely pureed
  2. Place sauce inside a slow cooker
  3. Season the beef with salt and pepper. Cut into 2-3 pieces
  4. Slow cook on low for 8 hours or on high for 6 hours
  5. When meat is tender, shred it using 2 forks and place it inside the tortillas
  6. To Serve
  7. Warm the tortillas in the oven
  8. Fill the tortillas with beef, pineapple, cotija cheese and lime
  9. Enjoy!
