Tacos Gobernador

Tacos Gobernador are corn tortillas filled with sautéed shrimp, onions, and bell peppers, topped with melted Chihuahua or mozzarella cheese, then folded and browned in butter and olive oil for a crispy, cheesy taco with a tender, flavorful shrimp filling. The warm, softened tortilla contrasts with the crisp exterior and gooey cheese inside, delivering a satisfying texture and seafood-forward taste.

Description

This recipe starts by gently sautéing chopped onions and bell peppers in butter until soft. Small pieces of shrimp are added and cooked briefly until opaque but not overcooked to maintain tenderness. The mixture is seasoned simply with salt and pepper. Shredded Chihuahua or mozzarella cheese is layered on top of the shrimp filling.

Each taco is assembled on a corn tortilla which is heated with butter and olive oil in a skillet. The tortilla is warmed until pliable, then folded over the shrimp and cheese mixture. The taco is flipped and cooked until the outside is crisp and golden and the cheese inside has melted. This process repeats until all tacos are cooked, creating tacos with a rich shrimp filling and a crispy, cheesy shell.

These tacos are traditionally served with salsa verde and salsa de chile de arbol, which add fresh and spicy accompaniments. Warming the tortillas before folding prevents tearing during cooking.

Ingredients

  • 1 Tbsp butter unsalted
  • 1 Tbsp olive oil
  • ½ onion chopped, medium, about 1 cup, yellow or white
  • 1 bell pepper chopped, medium
  • 1 Lb Shrimp Peeled, deveined and cut into small pieces, frozen or fresh
  • salt to taste
  • black pepper to taste
  • 2 cup Chihuahua cheese or mozzarella cheese, shredded
  • 8 to 10 corn tortillas
  • butter for frying tacos, quantity as needed

Instructions

  1. In a large skillet (an iron skillet preferably), add some butter and saute the onions and bell peppers. Cook until soft for about 2 minutes.
  2. Add the shrimp and cook for another 3 to 4 minutes or until the shrimp is no longer translucent. Note: Make sure not to overcook the shrimp as it can become rubbery.
  3. Season with salt and pepper to taste.
  4. Assemble the tacos by adding a layer of shrimp and top it with shredded cheese.
  5. On a separate skillet, melt some butter with 1 tablespoon of olive oil. Place the tacos open to warm up the entire tortilla. See note
  6. As soon as the tortilla becomes soft, using a spatula, fold it to cover the shrimp side.
  7. Flip the tacos to brown the other side. Cook until crispy and the cheese has melted. Repeat process until all tacos are done.

Notes

  • Warm tortillas before folding to prevent them from breaking while cooking.
  • Serve with salsa verde and salsa de chile de arbol for authentic accompaniment.
