Tacu Tacu

Ingredients

Servings

For the rice

  • 2 cups white rice , rinsed and well drained
  • 3 teaspoons salt fine
  • 6 cloves garlic , chopped
  • cups water boiling
  • 5 tablespoons vegetable oil

For the rice and beans

  • 14 oz. canary beans , Peruvian, cooked
  • 5 tablespoons extra-virgin olive oil
  • 1 red onion , cut into small cubes
  • 5 cloves garlic , chopped
  • 3 tablespoons aji amarillo pepper yellow pepper paste
  • cup vegetable stock , boiling
  • 1 tablespoon cumin ground
  • 2 tablespoons vegetable oil
  • salt
  • black pepper , freshly ground

For the breaded beef

  • 4 beef filet around 6 oz. / 180 g each
  • 1 cup flour
  • 2 egg beaten
  • 4 oz. panko , optional
  • vegetable oil , for frying

For the accompaniments

  • 4 egg fried
  • 4 plantains cut in half lengthwise and fried, small size
  • 2 red onion cut into thin strips, small
  • 1 cilantro chopped, small bunch
  • 1 rocoto pepper or yellow, diced, red variety
  • salt
  • black pepper , freshly ground

Instructions

Rice

  1. Pour the oil into a non-stick saucepan and heat it over medium heat. Brown the chopped garlic for a few seconds, without coloring it, stirring constantly.
  2. Add the boiling water and bring to the boil. Add the rice and salt. Cover and cook over low heat for 12 minutes, stirring occasionally. Set aside.

Rice with beans

  1. Using a food processor, blend 10 oz (300 g) of cooked beans and set aside.
  2. Pour the olive oil into a large skillet and heat it over medium heat.
  3. Brown the red onion for 30 seconds.
  4. Add chopped garlic cloves and yellow chili paste.
  5. Mix well and brown everything for a few minutes, stirring frequently.
  6. Add the blended beans, the rest of the whole beans, the cooked rice and mix well.
  7. Add the broth, ground cumin, salt, pepper and cook for a few minutes to thicken and reduce. Remove from heat and reserve.

Tacu Tacu

  1. Divide the rice and beans into 4 equal portions and shape each portion into a rectangular or oval shape.
  2. Add the vegetable oil into a large skillet and heat it over medium to high heat.
  3. Brown each portion of rice and beans for 1 to 2 minutes on each side. Cover and keep warm.

Beef filets

  1. Season the beef filets with salt and pepper.
  2. Dip each filet in flour, then in egg, then in panko (optional).
  3. Add the oil into a frying pan and heat it over medium heat. Fry the beef tenderloins for 4 to 5 minutes on each side.

Dressing the dish

  1. Arrange each tacu tacu on a large plate. Add the breaded beef filet, fried egg and fried bananas. Sprinkle with red onion, cilantro and rocoto pepper.
  2. Enjoy immediately.
