Tahini Green Beans Recipe
Description
The Tahini Green Beans Recipe involves roasting trimmed green beans tossed in olive oil, salt, and black pepper at 425°F until crisp-tender and lightly caramelized. While roasting, panko crumbs are toasted in browned butter until golden and aromatic. The dressing combines tahini, maple syrup, apple cider vinegar, garlic, salt, and cold water whisked to a pourable consistency.
Once roasted, the green beans are transferred to a serving bowl and combined with the toasted panko, fresh thinly sliced mint, and sumac, an acidic spice that adds a lemony brightness. This results in a dish with tender yet crisp vegetables balanced by creamy, sweet-tart dressing and crunchy topping.
This side dish suits a casual lunch or dinner, offering a unique flavor profile that complements a variety of meals. The recipe notes that tahini is commonly available near nut butters in grocery stores, making it accessible for home cooks.
Ingredients
- 1 ½ lb green beans washed and trimmed
- 1 tablespoon olive oil
- ¼ teaspoon salt sea salt
- ¼ teaspoon black pepper sea salt
- 1 tablespoon butter
- ¼ cup panko gluten-free if needed
- ¼ cup mint thinly sliced
- 1 teaspoon sumac
The Dressing
- 2 tablespoons tahini
- 1 tablespoon maple syrup
- 1 ½ teaspoons apple cider vinegar
- 1 small garlic minced, clove
- 1 pinch salt sea salt
- 2-3 teaspoons water cold
Instructions
- Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper. Place the beans on the baking sheet and toss them with the oil, salt, and pepper. Bake in the oven for 15 minutes, or until they are crisp and tender.
- While the beans are roasting, prepare the panko. Melt the butter in a small frying pan over medium heat. Continue to let it cook, without stirring, until it becomes golden brown, about 3 minutes. Remove the pan from the heat and stir in the panko.
- In a small bowl, whisk the tahini, maple syrup, apple cider vinegar, garlic, and sea salt. Add the water, 1 teaspoon at a time, until it is pourable.
- Put the beans into a serving bowl then add the panko, mint, and sumac and toss everything together well.
Notes
- Tahini is usually found near peanut butter in most grocery stores.
