Nutty and delicious, this easy tahini pasta is going to be your new obsession!

Ingredients
For the veggies:
- 1 tablespoon olive oil
- 1 small head broccoli cut into florets
- 1 green bell pepper sliced
- 1 tablespoon ginger fresh, minced
- 2 garlic cloves, minced
- 1 teaspoon soy sauce
For the tahini sauce:
- 1/4 cup tahini
- 2 tbsp soy sauce
- 1 tablespoon sweet chili sauce
- 1 tablespoon apple cider vinegar
- 2 teaspoon honey
For assembling:
- 1/2 pack pasta about 200-250g, or noodles of choice
- splash water reserved pasta water
Instructions
For the veggies:
- Heat the olive oil in a deep skillet over medium high heat. Add the broccoli, bell pepper, ginger, garlic, and soy sauce. Cook and stir for 3-4 minutes until fragrant, but broccoli still has some crunch. Remove skillet from the heat.
For the tahini sauce:
- Whisk together the tahini, soy sauce, sweet chili sauce, apple cider vinegar, and honey until smooth and combined. Set aside.
To assemble:
- Cook the pasta or noodles according to package instructions until al dente. Drain, reserving some pasta water. Toss cooked pasta with tahini sauce, add a splash of pasta water to thin out.
- Place coated pasta in serving dish, and top with broccoli/bell pepper mixture. Enjoy!
Notes
- Feel free to add any vegetables you like, or omit them entirely!
- This would be great with some shredded cooked chicken for a more substantial meal.
- Taste and adjust the tahini sauce according to your preference, add more honey for sweetness, more chili sauce for more heat etc.
