  • 4 large egg beaten

  • 2 tablespoons sesame oil
  • 1 1/2 cups pea frozen
  • 1 1/2 cups carrot frozen
  • 2 tablespoons garlic minced
  • 1/2 cup green onion sliced
  • 4 cups rice cooked
  • 1/4 cup soy sauce regular or low sodium

Instructions

  1. Heat a wok or skillet over medium heat and add the cooking oil.
  2. Pour in the beaten eggs and season with salt and pepper. Cook until fully scrambled. Remove the eggs from the pan and set them aside.
  3. Heat a large skillet or wok over medium-high heat and add the sesame oil.
  4. Once heated, add the frozen peas and carrots to the pan and sauté for about 2 minutes.
  5. Add the minced garlic and sauté for an additional minute.
  6. Add the cooked rice to the pan and toss with the vegetables. Sauté for about 5 minutes.
  7. Reduce the heat to medium-low and add the green onions and soy sauce to the pan. Fold in the cooked eggs.
  8. Stir carefully to combine and heat through.
