Takeout Style Chicken and Snow Peas
Description
This dish starts with thin strips of chicken breast treated with baking soda to tenderize the meat before rinsing and drying. Snow peas are trimmed and combined with sliced garlic and green onions for aromatic freshness. The sauce blends chicken stock, soy sauce, oyster sauce, sesame oil, and a small amount of sugar and black pepper to create a balanced, savory glaze.
Cooking involves quickly stir-frying the chicken at high heat, followed by adding the snow peas and aromatics to retain their crunch. The sauce is poured over the ingredients to thicken, coating the chicken and vegetables evenly. The resulting texture is tender chicken with crisp-tender vegetables in a smooth, flavorful sauce.
This recipe works well as a quick midweek dinner served with rice or noodles. The mild heat and balance of savory, sweet, and slightly nutty sesame flavor make it a versatile option.
Note that baking soda is a key tenderizing agent and should be fully rinsed off to avoid off-flavors. Chinese cooking wine provides distinctive depth but can be substituted with dry sherry if unavailable.
