Tamale Pie

Tamale Pie combines seasoned ground beef with tomatoes, corn, enchilada sauce, and spices, all topped with a cornbread-like layer made from cornmeal, butter, eggs, milk, and cheddar cheese. This casserole bakes until the topping firms up and forms a golden crust, offering a textured contrast to the savory filling beneath. It makes a hearty, comforting dish suitable for dinner or family meals.

Description

In this Tamale Pie, browned ground beef is combined with diced tomatoes, corn, green chiles, olives, and flavorful spices such as chili powder and cumin, simmered briefly to meld the flavors and reduce excess liquid. The savory mixture is poured into a prepared baking dish and topped with a rich cornmeal batter enhanced with butter, eggs, milk, shredded cheddar, sugar, and salt.

The dish bakes at 350°F until the cornmeal topping is set and lightly browned, providing a firm yet tender crust that contrasts with the hearty, moist meat and vegetable filling. The combination of enchilada sauce and green chiles adds a mild heat and depth, balanced by the sweetness of corn and tomatoes.

It is commonly served warm, often topped with sour cream, guacamole, or pico de gallo to add creaminess and freshness. The casserole can be made ahead and stored in an airtight container, making it suitable for leftovers.
