Description
The crust consists of crushed graham crackers mixed with brown sugar and melted butter, pressed evenly into a square baking pan and baked briefly to firm it up. The filling combines large egg yolks whisked with sweetened condensed milk and freshly squeezed lime juice to form a rich custard. It’s poured over the crust and baked just until set, resulting in a creamy yet structured bar that holds its shape when cut.
These lime bars have a bright, tangy flavor with a nicely balanced sweetness from the condensed milk and sugar crust. Chilling after baking helps the bars firm and meld flavors. They are commonly served cold and can be topped with sweetened whipped cream for added richness.
The bars can be made with other citrus juices if desired and freeze well, with freezing noted as a preferred method for storing and enjoying. Using fresh juice is emphasized for the best flavor and texture.
Ingredients
crust
- 1 1/4 cups graham cracker crumbs 1 sleeve or about 9 full graham crackers, crushed
- 2 Tbsp brown sugar packed
- 6 Tbsp butter melted
filling
- 4 egg large yolks
- 14 ounce sweetened condensed milk can
- 1/2 cup lime fresh squeezed juice
- Food Coloring optional, green, drop or two
Instructions
- Set oven to 350F
- Toss the crumbs with the sugar and melted butter, making sure to get all the crumbs evenly saturated.
- Press the crumbs evenly into the bottom of a 9x9 inch square baking pan.
- Whisk the egg yolks and condensed milk together in a bowl. Add the lime juice and mix well.
- Pour into the crust and bake for about 15-20 minutes, until just set.
- Let cool, then refrigerate for a few hours before serving.
- Serve cold with a dollop of sweetened whipped cream.
Notes
- The crust can be substituted with a shortbread base for a different texture.
- Freshly squeezed citrus juice is recommended over bottled juice for best flavor.
