Tantuni Wraps
Description
Tantuni Wraps include two main components: a seasoned beef mixture and a fresh onion herb topping. The beef is trimmed, cut into small pieces, then quickly cooked in butter with a spice blend including paprika, sumac, cumin, cayenne, and optionally urfa biber. Water is added and evaporated under a piece of lavash bread to infuse moisture and flavor, finishing the beef with a gentle steam and sizzle. The onion herb mixture combines diced white onion, parsley, and mint with spices like sumac and paprika for a fresh, tangy contrast.
The final dish is assembled by layering the onion mix, chopped tomatoes, and cooked beef on a piece of lavash or other thin flatbread, which is then rolled tightly and cut in half. This method results in a wrap with savory, spicy, and bright notes, balanced by the fresh herbs and crisp onion texture. Preparation techniques preserve the juiciness of the meat and the crispness of the topping.
These wraps are best served immediately to enjoy the contrast of warm meat and fresh vegetable elements. Offering substitutions like flank steak thinly sliced and diced provides flexibility while maintaining the dish's character. The use of lavash and layered steaming enhances the texture and flavor integration, making these wraps a distinctive choice for a handheld meal or snack.
Ingredients

- 1/2 tsp sumac
- 1/4 tsp kosher salt
Beef
- 1 lb beef top round diced small (See Note 1)
- 1 tbsp vegetable oil
- 1/2 tsp paprika
- 1/2 tsp sumac
- 1/2 tsp cumin ground
- 1/2 tsp cayenne pepper powder
- 1/2 tsp urfa biber optional, smoked red pepper
- 1/2 tsp kosher salt
- 1 tbsp butter
- 1/4 cup water
Assembly
- Lavash
- tomato chopped
Instructions
Onion Herb Mixture
- In a bowl combine the onion, herbs and spices. Mix well and set aside.
Tantuni
- Trim and remove all fat from the beef, cut into small strips or dice. Transfer to a bowl and mix with oil and spices.
- Heat a skillet over medium high heat and add butter to melt. Add seasoned beef and stir quickly to cook for several minutes until no longer pink. Add water and quickly toss with the meat. Lay a skillet sized piece of lavash or bread of choice (even a tortilla works) on top to steam. Cook until water has evaporated and you hear meat sizzle in skillet.
- Remove bread and lay top side on work surface. Add a few tablespoons of the onion mixture in a row across lower area of bread, then a row of tomatoes and then some beef. Roll and wrap, cut in half and serve immediately. Repeat with others.
Notes
- You can substitute flank steak sliced thin and diced instead of top round beef.
- Use lavash or a similar thin bread to steam the beef for a tender texture and to infuse flavor.
