Tapioca Pudding

Tapioca Pudding is a creamy dessert made by cooking minute tapioca pearls with sugar, milk, beaten egg, and vanilla until thickened to a smooth consistency. This pudding has a delicate texture and mild sweetness, which can be served warm or chilled. Optional toasted coconut garnish adds a hint of nutty flavor and texture contrast. The recipe uses common pantry ingredients and traditional stovetop cooking to create a comforting classic dessert.

Description

This Tapioca Pudding recipe starts by mixing sugar, minute tapioca, milk, and beaten egg, allowing the tapioca to hydrate slightly before cooking. The mixture is then cooked over medium heat with constant stirring until it reaches a full boil that cannot be stirred down, indicating proper thickening. After removing from heat, vanilla is stirred in for flavor.

The pudding is then covered with plastic wrap directly on the surface to prevent a skin from forming while it cools for 20 minutes before stirring and serving. It can be enjoyed either warm or chilled and garnished with toasted coconut for added texture and subtle flavor contrast.

This simple yet classic pudding relies on careful cooking and stirring to achieve the right consistency without curdling the egg, resulting in a smooth, creamy dessert. The recipe notes suggest refrigeration for up to five days and freezing options for longer storage, with thawing in the fridge recommended.
