Teriyaki Chicken
Description
This Teriyaki Chicken recipe begins by quickly searing bite-sized chicken breast pieces in olive oil to develop a light crust without fully cooking through. A sauce combining low sodium soy sauce, brown sugar, rice wine vinegar, toasted sesame oil, fresh grated ginger, minced garlic, and cornstarch is whisked together separately.
The sauce is added to the pan, where it simmers with the chicken for 4 to 5 minutes until thickened and the chicken is cooked through, resulting in a glossy coating. The fresh ginger and garlic provide aromatic warmth, balanced by the sweetness from brown sugar and the tang from rice wine vinegar.
To serve, the chicken is garnished with sliced green onions and sesame seeds for added flavor and texture. It pairs best when served over steamed rice with steamed broccoli on the side, creating a complete and balanced plate with protein, vegetables, and carbohydrate.
Ingredients
- 1 tablespoon olive oil
- 1.5 lbs chicken breast cut into 1-inch cubes, boneless, skinless
- 1/3 cup soy sauce low sodium
- 1/4 cup brown sugar
- 1/4 cup rice wine vinegar
- 1/2 teaspoon sesame oil toasted
- 2 teaspoons ginger peeled and grated fresh
- 3 cloves garlic minced
- 2 teaspoons cornstarch
- sesame seeds for garnish, sliced
- green onion for garnish, sliced
- rice for serving, steamed
- broccoli for serving, steamed
Instructions
- In a large skillet or wok, heat the oil over medium-high heat. Add the chicken and cook for 2 minutes. Use a spatula to flip it over; cook the other side for an additional 1-2 minutes. It doesn’t have to be cooked through, just seared on the outside.
- In a small mixing bowl, whisk together soy sauce, brown sugar, vinegar, sesame oil, fresh ginger, garlic, and cornstarch.
- Pour the sauce in the pan and stir. Let simmer for 4 to 5 minutes or until the sauce has thickened and the chicken is cooked through.
- Garnish with sesame seeds and green onions. Serve over rice and with steamed broccoli, if desired.
