Teriyaki Chicken Thighs
Description
This recipe uses boneless, skinless chicken thighs seasoned with salt, pepper, garlic powder, and paprika for a subtle spice layer. The chicken is pan-seared over medium heat until browned on both sides and cooked through. After resting the chicken, the same skillet is used to prepare the teriyaki sauce by simmering low-sodium soy sauce, honey, pineapple juice, garlic powder, and mirin until thickened. The cooked chicken thighs are returned to the pan to be coated evenly with the glaze, locking in moisture and flavor.
The result is juicy chicken with a sticky, sweet-savory teriyaki coating suitable to serve over rice or with steamed vegetables. The homemade sauce avoids overpowering heat or excess saltiness, offering a balanced glaze enhanced by pineapple juice's slight acidity.
Ingredients
- 8 to 10 chicken thighs boneless, skinless
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tbsp olive oil
For the Teriyaki Sauce
- ⅓ cup soy sauce low sodium
- 4 to 5 tbsp honey
- ¼ cup pineapple juice or orange juice
- 1 tbsp garlic powder
- 1 tbsp mirin
Instructions
- Season the chicken thighs with salt, pepper, garlic powder, and paprika.
- On medium heat, heat up the olive oil in a large non-stick skillet.
- Add the chicken thighs to the skillet, smooth side down. Cook in two batch if needed.
- Pan sear for 5 minutes, then flip and cook for 6 to 7 more minutes, or until cooked through.
- Set the chicken aside in a plate and wipe down the skillet.
- Add the soy sauce, honey, juice, garlic, and mirin to the skillet and bring it to a simmer.
- Once the sauce has thickened (around 3 to 5 minutes), add the chicken thighs back to the pan and coat the chicken with the sauce.
